Zucchini Bread - by Aunt Jannie
3 eggs
1 cup brown sugar
1 cup white sugar
1 cup vegetable oil
2 tsp. vanilla
2 cups zucchini (peeled and grated)
3 cups flour
1 tsp. baking soda
2 tsp. pumpkin pie spice
1 tsp. salt
1/2 tsp. baking powder
1/2 cup chopped walnuts
Grease and flour two 9x5x2 loaf pans. Mix all ingredients, pour into loaf pans. Bake at 350 degrees for 60 minutes. Serve warm with butter. Enjoy!
